Breakfast to me is the most important meal of the day. It’s a shame I never have time to get creative in the kitchen during the week. I’d love to mix things up more often. I've recently managed to switch from my usual bran flakes & raisins mix to a healthy oatmeal raspberry smoothie though and I’m really liking it because it takes 1 minute to put together, it's packed with good things and I can just drink it on my way to work. Did I mention it allows me a few more minutes in bed? Scored!
When the weekend comes I like a cooked breakfast like pancakes, a bacon buttie or scrambled eggs on toast but let’s face it that’s not very healthy. I had lots of leftover blueberries from yesterday’s brunch so I decided to whip up a lovely (and low cal) blueberry parfait to start the day on a healthier note.
All you have to do is crush some bran flakes or weetabix and add to a medium sized glass. Mix 1 table spoon of honey and non fat natural yogurt in another container. Add a tiny bit of lemon juice. Mix again and taste. Add more lemon if needed. Put your yogurt as a layer on top of your cereal base in the glass and then just pop some blueberries on top. Here you go! Easy. And the good thing is you can just replace the blueberries with whichever fruits you have left.
